Oats and Dates Nutty Breakfast Muffin

The month of New Year’s resolution is officially here! We see people making plenty of resolution to which many barely manage to stick to.

Well, I don’t fall into this group, I do not believe in making and never made any resolutions officially. Though I keep certain goals in my mind, on which I work upon and try to achieve.

Apart from various things in my mind , Health and Fitness is again one important aspect, to which I’ll try to give much attention this year.

I am giving a start with healthy meals. You can obviously plan healthy meals which is not difficult at all. Little changes in our lifestyles and being active is the key to a healthy body and mind.

Holidays are over, girls are back to school, mornings are busier than ever. I can barely afford to spend time for an elaborate breakfast, but will never step out without having one and I mean a healthy one.

This morning I prepared these super healthy and quick to make breakfast muffin with oatflour, dates and nuts. Drop in all the ingredients into your blender, whip up to a smooth batter and bake it. Delicious and healthy muffins are ready in few minutes.

These muffins are the perfect breakfast bread for any morning. They’re best served right out of the oven when they’re still hot with any topping of your choice. I used some delicious date molasses.

INGREDIENTS

  • 1 Cup oat flour
  • 1 large whole egg
  • 6-8 pitted and chopped soft dates
  • 5-6 walnuts or almonds chopped
  • 1/4 cup coconut oil or any other of your choice.
  • 1/3 almond milk or regular milk
  • 1/2 tsp cinnamon powder
  • 1/2 tsp baking powder
  • A pinch of sal
  • A tbsp of oil or butter greasing

DIRECTION

How to make Oat flour

  • Blend regular rolled oats in a grinder until you get a fine textured oat flour.

How to make the muffins

  1. Preheat the oven at 180 degree celsius. Meanwhile prepare your batter.
  2. Drop all the ingredients into the jar of your blender and whip up for 2 minutes or until you get a smooth batter.
  3. Grease your silicon muffin tray or any other with cooking spray, then pour the batter and bake for 15-20 minutes or until the inserted skewer comes out clean.

Enjoy your warm muffin with date molasses or honey.
