Sprouted moong and cucumber sandwich

“It is possible to be prepared than to panic” Isn’t it a great mantra?

Wether it is the testing time that we are going through during this pandemic of covid19 or on our regular routine of life, this quick yet so healthy sandwich can beat all those struggling days of yours without any guilt.

What better can it be than having all the green goodness with your morning breakfast like sprouts, fresh green chutney, cucumber and chicken breast ( optional). Well, I made both version vegetarian and with slices of honey roasted chicken breast.
I prefer whole meal or soy bread but here I had used a regular white bread.
INGREDIENTS

1 cup sprouted whole green moong beans
2 -3 tbsp green chutney
1 cucumber thinly sliced
2 tbsp mayonnaise ( optional. No mayonnaise has been used in this recipe)
1 tbsp butter
6 slices of any bread of your choice
1 tsp ghee
1/2 tsp cumin seeds
Pinch of chilli flakes

METHOD

1) cook the sprouted moong for 10 – 15 mins in some boiling water with salt, drain the water and keep it aside.
2) Butter the bread slices and spread some chutney on each slices.
3) Heat a pan, add a teaspoon of ghee. Now add cumin seeds and add the drained out cooked sprouted moong beans and chili flakes. Add seasoning if required.
4) Toss for a minute and keep it aside. Meanwhile arrange the sandwiches with filling of sprouted moong, cucumber slices and roasted chicken breast slices( which is optionl) cover and grill the sandwich on a pan or a sandwich grill.
