When it comes to what inspired me to start blogging, I would say there are couple of them.

Maybe it’s the love of being surrounded by friends and family for an intimate celebration I love so much. Either way, the art of entertaining has long been a passion of mine.

My inspiration begins with my travel experiences and quite possibly my favorite source to collect ideas from, apart from social media.

The chance to travel, ranks up there pretty high along with my passion towards cooking.


Most importantly the chance to create moments with people, when I travel, I admire and love, that ultimately become memories may be the greatest one of them.
I always believe one can travel and know a place best through its local food and culture.

While I was watching the Netflix series Money Heist, the memories of my visit to https://www.tripadvisor.com/Tourism-g187489-Toledo_Province_of_Toledo_Castile_La_Mancha-Vacations.html?fid=2942f70e-8940-4555-ab80-1b950e937ea6 in Spain came like a flashback to me. And since then, I and Biman have been often talking and remenecising our Spain trip.


A short stroll away, set among the dappled light of the poplar trees, guests were greeted with a beautiful table dressed with blooms and rustic foliage. The little restaurant we visited in this beautiful town of Toledo in Spain was a place with character. A rustic set up, beautiful ambiance with people in a large open garden area gave me totally a different kind of feeling.

My Sunday Chicken Roast narrates a similar story. It inspired me to create a similar space and ambiance for my family dinner on a Sunday evening.
 I felt like the rest of the courses called for something hearty like roasted potatoes and veggies, a fresh green salad, to go along with the chicken and to finish it off with some apple custard.

As we were clearing the dishes, I thought that it’s a huge gift to be able to gather and enjoy a hearty meal this way. Though a kitchen full of dishes and stuffs, means a lot of extra work, it is all soooo worth it to experience time like this with people in such a real and authentic way.



This recipe of whole roasted chicken is pretty simple and you can make this with just a few basic ingredients probably you’d be having in your pantry.

INGREDIENTS

1200 gm cleaned whole chicken with skin.

For Marinade

8-10 cloves of garlic
6 fresh bird eye red chillies or green chillies
Half a bunch of fresh flat leaves parsley or coriander.
1 large white or red onion thick sliced
1 tbsp dried oregano ( optional)
2 tsp pepper powder
Juice of 1/2 large lemon
Wedges of other half of the lemon
2 tbsp oil
Salt to taste


DIRECTION

In a blender jar, throw in all the ingredients and blend it into a nice marinade.

Put a few cuts on the chicken, most importantly on the end of the legs. This will help the chicken to cook evenly and fast.

Now pour the entire marinade over the chicken , rub it in out underneath the skin carefully keep in mind not to tear the skin.
Rub the marinade into the cavity area nicely and evenly.

Stuff the cavity of the chicken with lemon wedges and some onion slices. Drizzle some oil on the roasting pan, then place some remaining onion slices on the pan, now carefully place the chicken on the bed of onions with all the marinade over it.

Place the chicken into the oven in the middle rack and cook for 1 hour at 165 degrees celsius.
