Paneer Methi Malai Wrap

My family love wraps. Your meals is a winner when everyone ask for more.

This wrap is loaded with absolutely desi Indian fusion flavours.

Sitting in this lovely cafe and writing this post. I am in a new city,  a new country. I came to the city of Riyadh, in Saudi Arabia around the third week of December for a short visit. My stay here was supposed to be for a week or 10 days max.
A day after we reached, Saudi, land and sea borders were closed, flights were
suspended.

I am trying to make best use of the time, enjoying the lovely city, the chill weather, each and every moment wether it is exploring the cafes and restaurants, Ah! I am falling in love with them or in my little apartment with my girls.
Making a dish with bare minimum equipments, appliances, utensils, ingredients, is like a feeling of picnic to me.

No props, no dslr, but still enjoying blogging.


Today sorted out the lunch, packed for Biman, in so called Indian fusion manner.

Paneer Methi Malai wraps. Yes! It’s not kathi roll or anything like that.
A 15 mins recipe, quick, grab and go kind.

Recipe:


Heat a little olive oil in a pan, add half finely sliced onions, an inch of finely chopped ginger and garlic ( optional), toss them for a minute. Then add a quarter of thinly sliced medium size tomato and finely chopped a small bunch of methi leaves( fenugreek leaves). Sprinkle some salt, pepper, crushed chili flakes and you can use some chicken seasoning ( I used @schwartz.uk spicy italian). Saute for a min, then add around 150 gm roughly crumbled paneer ( cottage cheese) and a handful of smashed boiled chickpeas( can ones). Add any seasoning as per your taste and a littlebit of fresh cream. Give it a good mix until well combined or until the mixture becomes dry.

Take mission tortilla, spread some greek yogurt, add the paneer mixture, top it with some fresh greens. Wrap it and toast it on the pan until the crust is slightly brown and crisp.

I just threw everything in the pan, seasoned it and mixed it. Wrap is ready in a jiffy. Damn delicious  Try making it and do let me know your comments on it!
