Cranberry Mint Spicy Chicken Kofta Kebab

Hello!  upgrade your holiday menu with these, sweet, spicy, juicy kofta kebabs. 

What more should I say!  It’s a perfect holiday season recipe wether it is summer or winter.

Typically kofta kebabs are usually made with ground lamb or beef or a mix of ground pork, lamb, beef in mostly Balkan cuisines.

Another difference between the two is that kebabs are traditionally grilled on skewers, but this is not the case with kebapi. They are grilled by themselves, sausage-style, on the grill.
See that’s the easiest part! I grilled on a pan over stove top.

An amazing kebab recipe made with ground chicken, garlic, fresh mint, spices, sun-dried tomato paste, cranberries for that tangy sweetness.

These beauties will be on your table in within 30 minutes.

This is an easy recipe, and you can prepare the chicken kofta mixture ahead of time, if you need to. Plus the possibilities for how to serve these ground chicken patties are endless!

INGREDIENTS

2 slices whole wheat bread or bread crumbs
500 gm ground chicken
small onion
4 cloves of garlic
A handful fresh mint (or dried)
fresh parsley
2 tbsp dried cranberries and 1 tbsp sun-dried tomato paste
2 tsp Chilli flakes
1 tbsp toasted and coarsely ground coriander seeds
1 tsp toasted and coarsely ground cumin
1 tsp paprika
1 tbsp lemon juice
salt and pepper
one egg
1 tbsp olive oil and plus 2 tbsp for cooking.

DIRECTION

1) Blitz together, the bread crumbs, parsley, mint, chili flakes, garlic, onion, mint, spices cranberries, sun dried tomato paste and salt.

2) In a large bowl combine the above mixture with the ground chicken. Add, the egg, seasoning, lemon juice and oil. Shape it into 2 finger size thick long sausage shaped.

3)  Heat 2 tbsp oil on a griddle or pan and cook the kebabs evenly until golden brown on all sides over low to medium heat.

4) Garnish with fresh lime wedges and greens and pair with your favourite food.
